The Aji Benito chilli from Bolivia belongs to the species Capsicum baccatum. The plant has a branched and spreading growth and a long flowering period with a rich harvest. It grows to approx. 80-90 cm high and 60 cm wide and also grows well in cooler temperatures. Its chillies are known for their unique fruity and floral aromas.

Description

The plant must be tied to a support. Otherwise the stems will break under the weight of the fruits. The plant is suitable for advanced growers, due to the long growing time it needs to be planted early. Artificial light is recommended. The fruits are about 3 x 6 cm long and medium hot. They ripen to an intense red. The first fruits ripen at the end of July and the harvest lasts until autumn.

This variety is excellent for use in sauces, stews, soups and many other dishes. Aji Benito chillies can also be dried or pickled in oil. Due to their excellent flavours and medium to strong heat, they are very popular with chilli lovers.
